How to run a tailgate without running yourself to the ground


Timing, layout, food that survives the parking lot, and how to leave without a two-hour queue.

Arrive earlier than feels necessary

Three hours before kickoff is the standard for a reason. It is not about the extra drinking time — it is about getting a spot with room to open a trunk, having space to set up before neighboring cars box you in, and being able to eat unhurried.

Check the venue's tailgating rules ahead of time. Grill restrictions, glass bans, canopy size limits, and generator rules vary enormously and are enforced inconsistently right up until they are not.

Lay out the space deliberately

Put the food table where people can walk past it in a line rather than crowd around it. A table against the car with a clear approach on one side moves people through much better than an island everyone surrounds.

Keep the cooking area at the edge of your footprint, not the middle. Trash goes at the exit end of the space where people naturally pass on their way out, which does more for cleanup than any amount of asking.

Food that survives a parking lot

The best tailgate food is finished before you leave home and only needs reheating or assembly on site. Chili, pulled pork, baked pasta, and marinated skewers all travel well and hold temperature.

Keep cold food genuinely cold. A cooler that has been opened twenty times in the sun is not a refrigerator. Use two coolers — drinks in one, food in the other — so the food cooler stays shut.

The stuff people forget

Trash bags, more than you think. Paper towels. A folding table you can actually wipe down. Hand sanitizer. A lighter that works. Something to weigh down anything light on a windy day.

Write down your parking row or drop a pin. After a game, in the dark, in a lot of identical cars, this saves twenty minutes and an argument.

Leaving well

The lot empties in a slow surge for about an hour after the game. If you are not in a hurry, stay put and eat the leftovers — you will get out faster at the ninety-minute mark than at the twenty.

Pack the car in the reverse order you unloaded it, and do a final sweep for trash before you get in. Sites that get trashed are the reason tailgating rules tighten.
